While Ruth's requires a 10 minute drive from our downtown hotels, the Emigration Canyon diner with its creek side patios, lovely views and big menu are worth the commute. The casual and rustic eatery is actually located in a renovated trolley car, so count on original touches. In terms of the menu, breakfast is offered until 4p every day and all menus have solid options for those looking to keep it light, vegetarian, or vegan. Big eaters will love it.
Breakfast highlights include the cinnamon roll French toast, fruit parfait, granola, huevos rancheros, a "skinny burrito" with eggbeaters, peppers, salsa, fresh veggie omelet (can sub in eggbeaters), pulled pork and eggs and the daily pancake special. There are two vegan options as well including a potato burrito with guacamole, beans, and shrooms as well as a skittle type thing with hash browns, shrooms, pico de galla and guac. The lunch/dinner menu boasts a smoked salmon salad, Chinese chicken salad, mixed green Cobb salad with various meats, and a tasty spinach salad with yummy toppings (option of protein). Pastas, hot sandwiches and house specials such as chicken or veggie enchiladas, pan seared salmon, teriyaki chicken and various burgers (including a veggie burger) round out this friendly menu.
